Moringa Uttapam

Preparation Timeline

Ingredients
- Dosa/idli batter – 2 cups (400g)
- Moringa powder – 1 tsp (5g)
- Onion – 1 small, chopped (70g)
- Tomato – 1 small, chopped (70g)
- Green chili – 1, chopped
- Coriander leaves – 2 tbsp (10g)
- Oil – 2 tbsp (30ml)
Instructions
- Step 1 — Prepare batter (≈2 mins): In a bowl, mix moringa powder into the dosa/idli batter until evenly combined.
- Step 2 — Cook uttapam (≈15 mins): Heat a non-stick tawa and lightly grease with oil. Pour a ladleful of batter and spread slightly into a thick circle. Sprinkle chopped onion, tomato, green chili, and coriander on top. Drizzle some oil around the edges and cook on medium heat until golden at the bottom. Flip and cook the other side until crisp and cooked through.
- Serve hot with coconut chutney or sambar.
Tips
- Use fermented batter for best taste and fluffiness.
- Add grated carrot or capsicum for extra nutrition and color.
- Cook on medium heat to ensure even browning and crisp edges.
