Ingredients

  • Wheat flour – 2 cups (250g)
  • Moringa powder – 1 tbsp (10g)
  • Salt – 1 tsp (5g)
  • Oil – 1 tsp (5ml) for dough
  • Water – ¾ cup (180ml)
  • Oil – for deep frying (250ml)

Instructions

  1. Step 1 — Dough (≈10 mins): In a mixing bowl, combine wheat flour, moringa powder, salt, and 1 tsp oil. Gradually add water and knead into a stiff, smooth dough. Cover and let it rest for 5 minutes.
  2. Step 2 — Roll (≈5 mins): Divide the dough into small balls. Roll each ball into small discs (about 4 inches in diameter).
  3. Step 3 — Fry (≈15 mins): Heat oil in a deep pan. Fry one poori at a time, gently pressing with a slotted spoon until puffed. Flip and fry until golden. Drain on paper towels. Serve hot with curry or potato bhaji.

Tips

  • Make sure the dough is firm — soft dough will absorb more oil.
  • Fry on medium-high heat for puffed, crisp pooris.
  • Add a pinch of ajwain (carom seeds) for added flavor.
