Tasty way to use leftover idlis - stir-fried with Moringa !
Moringa Idli Stir-Fry

Ingredients
- Leftover idlis – 6
- Moringa powder – ½ tsp (2g)
- Onion – 1 small, chopped (70g)
- Green chili – 1
- Mustard seeds – 1 tsp (5g)
- Curry leaves – 6–8
- Oil – 1 tbsp (15ml)
- Salt – ½ tsp (3g)
Instructions
- Step 1 — Prep (≈2 mins): Cut the leftover idlis into small cubes.
- Step 2 — Stir fry (≈8 mins): Heat oil in a pan. Add mustard seeds and let them splutter. Add curry leaves, chopped onion, and green chili. Sauté for 2 minutes. Add idli cubes, salt, and moringa powder. Stir-fry until lightly golden and crisp.
- Serve hot with chutney or sambar.
Tips
- Use refrigerated idlis for a firmer texture and better stir-fry results.
- Add a dash of lemon juice for tanginess.
- Top with fresh coriander before serving for added freshness.
