Ingredients

  • Gram flour – 1 cup (120g)
  • Moringa powder – 1 tsp (5g)
  • Onion – 1 large, sliced (120g)
  • Green chili – 1, chopped
  • Red chili powder – ½ tsp (2g)
  • Ajwain (carom seeds) – ½ tsp (2g)
  • Salt – 1 tsp (5g)
  • Water – ½ cup (120ml)
  • Oil – for deep frying (200ml)

Instructions

  1. Step 1 — Make batter (≈5 mins): In a bowl, mix gram flour, moringa powder, red chili powder, ajwain, onion slices, and green chili. Gradually add water to make a thick, lump-free batter.
  2. Step 2 — Fry pakoras (≈15 mins): Heat oil in a deep frying pan over medium heat. Drop spoonfuls of the batter and fry until golden brown and crisp. Remove and drain on paper towels.
  3. Serve hot with mint chutney, tamarind chutney, or tomato ketchup.

Tips

  • For extra crispiness, add 1 tablespoon of rice flour to the batter.
  • Fry on medium flame for even cooking and color.
  • Add chopped spinach or grated cabbage for a nutritious twist.
