Ingredients
- Gram flour – 1 cup (120g)
- Moringa powder – 1 tsp (5g)
- Onion – 1 large, sliced (120g)
- Green chili – 1, chopped
- Red chili powder – ½ tsp (2g)
- Ajwain (carom seeds) – ½ tsp (2g)
- Salt – 1 tsp (5g)
- Water – ½ cup (120ml)
- Oil – for deep frying (200ml)
Instructions
- Step 1 — Make batter (≈5 mins): In a bowl, mix gram flour, moringa powder, red chili powder, ajwain, onion slices, and green chili. Gradually add water to make a thick, lump-free batter.
- Step 2 — Fry pakoras (≈15 mins): Heat oil in a deep frying pan over medium heat. Drop spoonfuls of the batter and fry until golden brown and crisp. Remove and drain on paper towels.
- Serve hot with mint chutney, tamarind chutney, or tomato ketchup.
Tips
- For extra crispiness, add 1 tablespoon of rice flour to the batter.
- Fry on medium flame for even cooking and color.
- Add chopped spinach or grated cabbage for a nutritious twist.
