Moringa Idiyappam (Steamed Rice Noodles)

Ingredients
- Rice flour – 2 cups (200g)
- Moringa powder – 1 tsp (5g)
- Salt – ½ tsp (3g)
- Hot water – 1.5 cups (360ml)
Instructions
- Step 1 — Make dough (≈5 mins): In a bowl, mix rice flour, moringa powder, and salt. Boil water and add gradually while stirring. Mix until it forms a soft, pliable dough. Let it rest for a minute.
- Step 2 — Shape & steam (≈10 mins): Grease idiyappam plates or steamer plates. Fill an idiyappam press or sevai press with the dough and press into thin noodle-like strings directly onto the greased plates. Steam for 8–10 minutes until cooked through.
- Serve hot with sweetened coconut milk, chutney, or vegetable curry.
Tips
- Use hot (not boiling) water and add gradually to get the right dough consistency.
- If dough sticks, lightly oil the press and your hands to ease shaping.
- Serve immediately for the best texture; leftovers can be reheated by steaming briefly.
