Moringa Mixed Vegetable Curry

Ingredients
- Carrot – 1 medium, chopped (80g)
- Potato – 1 medium, diced (100g)
- Green beans – ½ cup (60g)
- Peas – ¼ cup (40g)
- Onion – 1 medium, chopped (100g)
- Tomato – 1 medium, chopped (100g)
- Moringa powder – 1 tsp (5g)
- Turmeric powder – ½ tsp (2g)
- Coriander powder – 1 tsp (3g)
- Garam masala – ½ tsp (2g)
- Cumin seeds – 1 tsp (5g)
- Oil – 2 tbsp (30ml)
- Salt – 1.5 tsp (7g)
- Water – 1.5 cups (360ml)
Instructions
- Step 1 — Tempering (≈2 mins): Heat oil in a pan. Add cumin seeds and chopped onion. Sauté until onions turn golden.
- Step 2 — Cook vegetables (≈15 mins): Add chopped tomato, turmeric, coriander powder, and garam masala. Stir for a minute, then add carrot, potato, green beans, peas, and salt. Mix well, add 1.5 cups water, cover, and cook until vegetables are tender (about 12–15 minutes).
- Step 3 — Add moringa (≈2 mins): Stir in moringa powder and simmer for 2 minutes to combine. Adjust seasoning and serve hot.
Tips
- Cut vegetables into uniform pieces to ensure even cooking.
- Add a splash of coconut milk or a dollop of yogurt for a creamier curry.
- Garnish with fresh coriander and a squeeze of lemon for brightness.
