Moringa Kheer – traditional Indian dessert !
Moringa Rice Kheer

Ingredients
- Rice – ¼ cup (50g)
- Milk – 4 cups (1 liter)
- Sugar – ⅓ cup (70g)
- Moringa powder – ½ tsp (2g)
- Cardamom powder – ½ tsp (2g)
- Cashews & raisins – 2 tbsp (20g)
- Ghee – 1 tbsp (15ml)
Instructions
- Step 1 — Cook rice (≈10 mins): Rinse rice and cook in 1 cup water until soft and the grains begin to break down. Drain any excess water if needed.
- Step 2 — Boil milk (≈20 mins): In a heavy-bottomed pan, bring milk to a gentle boil. Add the cooked rice and simmer on low-medium heat, stirring occasionally, until the milk thickens and the mixture reaches a creamy kheer consistency (about 20 minutes).
- Step 3 — Flavor (≈5 mins): Stir in sugar, cardamom powder, and moringa powder. In a small skillet, heat ghee and lightly fry cashews and raisins until golden; add them to the kheer. Mix well and remove from heat.
- Serve warm or chilled as desired.
Tips
- Use full-fat milk for a richer, creamier kheer; simmer slowly to avoid scorching.
- Soak the rice for 10–15 minutes beforehand to shorten cooking time and improve texture.
- Adjust sweetness to taste, and garnish with slivered nuts and a pinch of saffron for extra aroma.
