Ingredients

  • Rice – ¼ cup (50g)
  • Milk – 4 cups (1 liter)
  • Sugar – ⅓ cup (70g)
  • Moringa powder – ½ tsp (2g)
  • Cardamom powder – ½ tsp (2g)
  • Cashews & raisins – 2 tbsp (20g)
  • Ghee – 1 tbsp (15ml)

Instructions

  1. Step 1 — Cook rice (≈10 mins): Rinse rice and cook in 1 cup water until soft and the grains begin to break down. Drain any excess water if needed.
  2. Step 2 — Boil milk (≈20 mins): In a heavy-bottomed pan, bring milk to a gentle boil. Add the cooked rice and simmer on low-medium heat, stirring occasionally, until the milk thickens and the mixture reaches a creamy kheer consistency (about 20 minutes).
  3. Step 3 — Flavor (≈5 mins): Stir in sugar, cardamom powder, and moringa powder. In a small skillet, heat ghee and lightly fry cashews and raisins until golden; add them to the kheer. Mix well and remove from heat.
  4. Serve warm or chilled as desired.

Tips

  • Use full-fat milk for a richer, creamier kheer; simmer slowly to avoid scorching.
  • Soak the rice for 10–15 minutes beforehand to shorten cooking time and improve texture.
  • Adjust sweetness to taste, and garnish with slivered nuts and a pinch of saffron for extra aroma.
